your other hand should not do anything, otherwise you might be called for a foul, it should remain at your waist to keep you from pushing off on your defender

as for the post lane cut offs, either pull up for a jump shot if you have enough distance, or look to pass

You could use your off hand to protect the ball. Keep your head-up and your eyes on the alert for an open lane or a team-mate cutting to the basket. If no one cuts to the hole and you get cut-off by a defender look to shoot the short jumper.

Use your off fore-arm to protect the ball. if it's at your waist there is a good chance the ball will get knocked out of your hand. Post lane cut off?
dish it or a soft runner.
