Never been to Mardi Gras, so I guess I would soak in all the fun of the atmosphere, and ask around to where the best place to eat was located. I have always wanted to try Shrimp or Chicken Gumbo - so that would be one of the firsts on my list. I would also love to see their parade in person, it sure would beat watching it on television.
