This is a very complex question and the answer would depend on you definition of country.
This is so because a lot of territories are technically self-governing, but are formally a part of another country. At the same time some territories claim to be a part of a larger country, but are in effect self-governed.
There also territories with very loosely organized goverment, if any at all.

All this noted -- if you want an official answer:
United Nations formally recognizes 193 states. [1]

A country is just an area of land which determines divisions of property and race.
If you take the whole of the earth as one big country that is separated by expanses of water, boundaries of 'countries' exist at our own making. Therefore if you take the earth and one country as a whole there is only one race.. that is the human race.

Therefore there is only one country... the whole of the earth.
