Interview elsewhere then when you get an offer take it to your manager and say you'd like to stay there but only if you get at least a few serving shifts per week. Get them to put it writing that for every host shift worked per week you'll have an equal # if not more server shifts. If they won't meet you in the middle, shake their hand, say "Thanks, but you know how I feel. I'll continue to work here for two weeks if you want me to, but I'm gonna take this other offer."

Never make it a threat. It's all negotiation, and everything is negotiable.

Ask what the hold up is. Ask to try a less busy time of day and work into the busy time. I'm at Applebee's almost every Friday night. We've got the host and the server trained to expect us and save our big bar table.

I would just tell him, in a casual conversation, that I am really looking forward to becoming server and moving up with the company.

Slow down there. Take your time. You want to be as familiar as possible with the restaurant environment before you are a server. Dealing with tired, annoyed, hungry customers is not fun. Your boss wants to make sure that you are ready for it.

JUst like you did now. Explain your situation. Do hosts get a cut of the tips?

tell one of the servers to miss work, then offer to step up and work for him/her.
