Considering the death happened on a weekend, should you wait until the next weekend for the funeral or should it be sooner?

The usual time is 3 days...unless you are expecting a lot of out of towners.

It depends. When a death is determined to be suspicious by the police, it takes more time. Also, when there is a pending wrongful death lawsuit, an autopsy also takes time.

I would suggest having a family meeting before making burial arrangements. This way, you can accept funds, determine pallbearers, eulogies and religious preferences. Usually mortuaries encourage this.

If it is about two to three days before the weekend I would wait until the weekend. That gives friends and relatives time to get organized and ready to travel. If it is going to be a closed casket ceremony you can wait until it is appropriate for all who are concerned. I would never recommend waiting longer than five days, though, unless there are extenuating circumstances. (There are some exceptions: soldiers killed in action, political figures, etc.)
