I also saw WIngs in their "Wings Over America" tour. I was at the retaining wall. I got great pictures!! I offered him a hat I was wearin. He made funny faces at me. Jimmy ended up wearing it in the concert!! I was even on tv the next day!

I never met him, but a friend of a friend of mine was a recording engineer on the Wings song "Junior's Farm". Here's a little bit of trivial. "Junior's Farm" was recorded in Nashville, TN. "Junior" was a record executive in the Nashville area, and owned a small ranch near the small town of Mt Juliet, just east of Nashville. The song has a lot of references to things that happened while McCartney and his entourage wre visiting the farm.
One amusing story relates to the line "We all chipped in for a bag of cement".
One Sunday afternoon, Paul and several members of the band were relaxing on the farm, while the farm hand was setting a corner post on a fence. Setting a corner post on a fence requires that the bottom of the post be encased in concrete. Most people use a product known as "Quik-Crete" which has the gravel, sand and cement in 150 pound bags. Just add water, stir and pour. A bag of Quik-Crete in 1974 cost about 50 cents. Back then, atm machines were not common yet, and since the banks were closed for Sunday, and no-one had their checkbooks with them. So all the wealthy musicians, and record execs, ended up chipping in their pocket change to pay for a bag of Quik-Crete so the the farm hand could run to the farm-supply store (which was open on Sundays ) to buy the bag and finish his project.
