Take the Boat to the Island of Women! Do not buy anything on the boat there ... however... when you arrive (morning is best) go to the shack at the right of the smaller dock with all the local guys offering snorkeling trips. It will cost about 200 pesos each, but it is so worth it! (They speak no english, and it's best to bring your own snorkel gear).

First check with your hotel/resort and see if you get any free excursions with your stay. Many of the resorts offer these. They are usually guided tours with transportation to the Mayan Ruins etc. If you can do it for free take advantage of the tours. Other wise your hotel can direct you to tour guides that operate with in your resort. There's so much to do and the prices very greatly. One of the other posters gave that huge list of things to do. I do not suggest the swim with dolphins tours. They are wild animals that are kept in captivity and by taking part of those kinds of activities you are only helping to exploit them.

do a swim with the dolphins, ride horses on the beach, and get out of the city for at least one day to hike in surrounding areas. there are also some really great clubs you should check out.
