1. They can be used to grip a large piece of food.
2. When eating, the crayfish will cross the chelipeds in front of his head -- probably to prevent other creatures from trying to take the food away from him.
3. When another crayfish approaches, the crayfish will extend his chelipeds in front of him to warn off the other crayfish.
4. In males, they are used to hold the female's head during mating.
5. If a predator grabs the crayfish, he can use the chelipeds to pinch the predator.
