This is so the condensation that forms will not be on the growth surface and inhibit bacterial growth. The bacteria will grow on the moist, but not wet, agar surface fine. The condensation will form
on the lid and not be a problem for the bacteria.

It is so the condensation that forms on the plastic doesn't drip down and spread out the bacteria. If a water droplet hit the surface on a colony it could spread the colony out. Then you wouldn't know if that spot came from one single cell or if the colony got broken up and it is now multiple spots on the agar.

I'm guessing here but it could be because heat rises. To allow the specimens to grow quicker it is placed upside down so that the specimen will be on the warmest part of the dish.

so when condensation forms, it drops down and does not drown whatever you are growing.
