At Dollywood in Tennessee they have the Dixie Stampede which is similar to what you're looking for I think. (Oh, I just noticed, there are more locations than just TN for Dixie Stampede)
You seem to want a western theme, but Midieval Times has a show and it's pretty awesome, with knights fighting on horseback. They don't serve steak though...ribs and chicken.

I don't know where you are located Cookie but in Southern
California there is a place called the Crazy Horse Saloon and
Steak House. It's at the Spectrum in Irvine and they get some
big name entertainment in there a couple nights a week.

San Francisco SteakHouse in San Antonio, Texas. Has a show with a girl who swings on a huge trapeeze on the stage. It's interesting, they even bring the children up and let them go for a ride.
