I think you have made a very good decision on the parks. Epcot has many thillers. So does Island of Adventure. They are both fantastic parks. I have been to both Universal Parks and All Disney Parks. If you want the usual Disney Experience and really feel like you are a kid again I would choose Magic Kingdom. It is a really great park! They have some thrillers and more babyish rides that you can still enjoy to the fullest. If you go to magic kingdom you also have a chance at staying in the cinderella suite at disneyworld! That would be amazing I think. MGM is a definite no. There is not enough to do there. Although it is still fun. Animal Kingdom is actually brodening it's ride venue. My favorite there is Expedition Everest the newest ride. It is a big rollar coaster. Overall I think Epcot is you best choice for thrill and second I would pic the Magic Kingdom. For universal if you want to have one thrilling park and one layed back you could do Magic Kingdom and Island of Adventure or the reverse Epcot and Universal Studios (classic)!!! The best parks in Orlando are Disney's Magical Kingdom and Universal's Islands of Adventure.
If you've never been to Disney before you must go to Magical Kingdom, it gives you the best Disney experience. All their parks are fun and they do offer park hopper passes, but don't do that. Their parks are far apart and they all have too many things that you need atleast a full day to get the whole experience.
Universal is fun, but Islands of Adventure has the best rides. Universal and Islands of Adventure are right next door to each other, you have to pass one to get to the other park. They offer a park hopper pass for just about $10 more than the regular pass. So I would recommend paying the extra money and you can check out both parks.

Since you are doing both, Epcot and Islands of Adventure are good choices. It all depends on personal taste. I am a big fan of the Magic Kingdom myself, with Epcot a close second. At Epcot you can not only tour some pretty cool rides, but you get to go through each country in the world showcase and sample the foods and drink. Don't miss the nighttime show at Epcot, Illuminations. It is spectacular.

Those are actually the two parks that I would choose if it were me going. I think they are the best for adults as far as rides.
One thing to consider, I'm not sure if you are on a budget or not. But, if you only do one days at each, you will be paying the highest rate for both tickets. Both Disney and Universal offer a special for the longer passes, but don't offer any discounts for a one day pass. So, if you are looking to save some money, here is my suggestion:
I would choose one or the other and then maybe do the next one on your next visit. Universal has a special for a pass that is less than $100 and allows you to go to both parks for 7 days. This really lowers the cost and you could go as much as you like. Since you will only have three days, you would have plenty to do, since Universal doesn't usually take as long as Disney to see everything.
Now, if you choose Disney, you won't be saving quite as much on your passes. Disney's real savings comes at 4 days and up, but you will still be saving some money once you hit the third day of passes. After the third day, the cost only goes up around $1.07 per person, per day. So, that would be your option for Disney.
Now, while Universal's tickets are running less, if you are needing a hotel and want to stay onsite, their hotels run closer to the cost of Disney's deluxe resorts. So, while the Disney tickets are a little more, you will be able to stay at a less expensive hotel, if you choose.
Now, all that being said, if money really doesn't matter, then I would choose EPCOT and Islands of Adventures as well. Those happen to be my favorite parks for each. Magic Kingdom is also a lot of fun, but offers more for children. MGM and Animal Kingdom are also fun, but are smaller and don't take as much time!

It all depends on what you like. If you like thrill ride (like roller coasters) then Islands of Adventure would be a great choice. I would highly recommend getting the Unofficial Guide to Walt Disney World. It describes all the rides at Disney World and Islands of Adventure/Universal Studios. It also rates each ride by age. I would recommend a night at Pleasure Island at Downtown Disney. It has a number of dance clubs and a comedy club that I love. The comedy club is all improv. The guide also rates all the Disney restaurants. The only problem with the guide is that there may be too much information.

We went to Disney March last year. We went to the Magic Kingdom and didnt have as much fun as we thought we would. I would have much rather gone to either Animal Kingdom or Epcot. I think those would be a little more "adult" friendly.
We compared Disney and Universal Studios and figured Disney would be a lot more fun. But we like the Disney characters better than US anyway. :)

You really would enjoy Universal Studios. Of course Epcot, Animal Kingdom or MGM would be just as fun.
As far as scheduling, some may argue, but I think you can do Animal Kingdom in half a day. Epcot, depending on how much you do and how crowded it is, will take at least one day. I would say the same for Univeral or MGM.

We went to Epcot and it was very boring, definately go to Islands of Adventure, and to Universal Studio, it is a great and wonderful time. Get brochure ahead of time to plan out your vacation ahead of time. We vacationed in Orlando and had a wonderful time. Happy Vacationing!
