Linen trousers and a short sleaved linen shirt all in white. Looks smart and will help keep him cool.

Since he's not in the wedding party I don't think you need to worry too much other then keeping him cool. I like the shorts & shirt idea but linen can be itchy & scratchy especially to an 8 year old.
You should be able to find lightweight shorts & short sleeved shirt in a cotton mix that will be much more comfortable for him. You can also put a skinny tie on him to dress it up a bit more. I really don't think the colour would matter either. Khaki can be dressed up just as smartly (and he could wear it again) !!

It depends on how formal the wedding party is dressed. At my beach wedding my 10 year old wore a navy hibiscus print aloha shirt with tan linen shorts and we all went bare foot. I've also been to weddings on the beach wear the guests wore suits and cocktail dresses. If in doubt ask the bride what she would prefer. After all it is her wedding and I'm sure she will know what she would want everyone to wear.

Just remember that linen can crease very easily, it might be better to get a cotton mix linen so that it holds it shape a bit more.
I agree with the previous poster that he should be kept cool so that he enjoys the ceremony.
