2005 Ashes series and, in particular, the match where England beat Australia by 2 runs was incredible.
The South Africa vs Australia match where Aus put on 434/4 and SA beat it was so OMG but was plagued by miserable bowling and poor fielding. As was the recent Chappell-Hadlee series where NZ chased down 330+ scores twice.

I will say it was india v/s windies at 1983 world cup
after scoring 183 and sir vivian richards getting the head start nobody would have thought in a blue moon that india can pull this one off.
but kapils catch chanced the fortune in favour of india,and then minnows india won the cup to end the windies dominance,and since then cricket wasnt the same for indians
