It depends on what you like. I like light, fast moving books with short chapters and lots of cliffhangers or funny bits for flights. It's hard to concentrate too much with the small seat, other people, interruptions, etc.
Harry Potter and the Sorcerer's Stone by Rowling (the first two books are shorter, lighter, and funnier than the later ones.)
James Patterson books. Short chapters, easy to read, and costant cliff-hangers.
Brigit Jones Diary by Fielding. Laughed out loud reading this on a plane once, and I am not a big chick lit fan.
I also like short story anthologies and magazines. The stories/articles are short, so if you get one you don't particularly like, skip it and move on.
I also like books on tape. If the flight is bumpy, this eliminates the motion-sickness associated with reading.

Hover Car Racer - Matthew Reilley (Sci-fi)
Dear John - Nicholas Sparks (Romance)
Burnt Sienna - David Morrell (Action)
Since you didn't specify what genre u like reading, these are one of each that I can think of at the moment. They're all excellent books. You should try all of them.

Paulo Cohelo- either fifth mountain or The Alchemist
or you can read some short stories, either by Stephen king "Everything's eventual" is a nice collection if you like horror, or "Different Seasons" - less horror like..
short stories by Ali Smith- havn't read them yet, but they were highly recommended to me and I enjjoyed her novel very much...
also Virginia Wolf wrote some nice short stories- I especially like Street Haunting...

I think Forrest Gump - it's much shorter than the movie and has different adventures. It's very funn as well, which is a definite plus.

I think almost any James Patterson novels. Most of them are great and very hard to put down.
