I would like to be able to do some work for the community whilst in Texas visiting my gf, just to while away the hours in the daydime and maybe make some friends too.

You do not need a work permit for volunteer work. Check with the entity that you want to volunteer for for their requirements.

I don't believe you do. The only time you will need a work permit is if you get any compensation even if it is in kind because it has to be declared and taxed.

If you are an American you can live and work anywhere in the union without a work permit.
