It depends on what your definition of "OS" is. The Ericsson Z558i indeed doesn't have a standard OS - it is controlled by proprietary built-in software. There are no viruses for it (and writing one would be next to impossible), so don't worry.

Nokia 3650 does have a standard OS - it uses Symbian S60 R2. There are indeed many viruses and Trojan horses for it. However, you don't get infected by going on-line with the phone - you get infected by receiving a malicious MMS, receiving a virus that sends itself via Bluetooth, or by downloading a Trojanized SIS package from a pirate site. There are plenty of anti-virus programs for Symbian phones, too.

Every mobile phone has an OS, a mobile cant work without an OS. Its just that nokia mostly uses symbian as an OS for most of their mobile phones. A symbian OS has some advantages as it gives your more customization but its prone to viruses. Other manufacturers (samsung, sony ericsson etc) dont use symbian, so that means they cant be infected with viruses. A sony ericsson z558i wont be infected if you go online or anything because its designed that way.

hope i could be of some help
