If I am graduating this May and I am applying for a job in another city, is it realistic for me to put my start date in August?

It's the earliest date you'd be willing to report to work.

So if you want a couple months off after graduation that's fine. If you want to start the day after graduation, put that down.

Yes, b/c a.) they have to offer you a job first and then you will have to make the arrangements to move to the different state, and b.) you may even be able to go w/out giving a start date b/c what you can do is say, "Graduation date, May x....Able to interview beginning x date (whichever date you choose that you will be able to begin the interview process after your graduation.
