Lying and cheating is not gender specific. The fact that you know this woman is a cheat yet still communicate with her says more about your issues than hers. Why are you still so interested in someone who has clearly demonstrated that she's taking you for a ride? Concern yourself with your own weaknesses instead of trying to make sense of hers.

The way you describe her is not as a girlfriend, but a sex buddy. The only thing she did wrong was try to deceive you out of extra money. Other than that, you should have known what to expect from someone that you use for sex.

I'm sorry you are in pain. This "person" clearly did you wrong. I truly don't know what makes anyone cheat. If I were going to guess, the answer is selfishness. She cares more about her own happiness than yours. I know this hurts, but it is probably for the best.
