Air conditioning operates to cool the room by drying moisture out of the air, hence leading to heat energy escaping with it. This leads to the room being less humid.

An air conditioner has a compressor pump that creates a cold coil. When the air in the room is blown across the coils, the moisture in the air condenses on these coils.
Think of it like the moisture on the outside of a cold glass of water.
The moisture drips off the coils and it runs outside.
The air returns with less moisture reducing the relative humidity.

Several factors. Number one is how well insulated and air tight your house is. If you shower or use the sink, etc. you put more humidity in the roomsthat the AC has to remove.
