Gold's Atomic Number is 79 which means that it has 79 protons and 79 electrons. The 198 is the Atomic Mass which is the total number of protons and neutrons. So just because it is Gold you know that the mass of the protons would be 79 approximately, regardless of the Atomic Mass.
