What particular questions can I put on the questionnaire to determine how signiicant is the role of gender in terms o how college students chose their major fields of study. For an instance, is it really true that females tend to gravitate more towards English and Language and Males towards Math and Science?

You may also want to explore the left brain/right brain connection. Hemispheres of the brain control the opposite sides of the body but they are also responsible for personality traits (like mathematical or artsy). Here's a sight about it. http://www.funderstanding.com/right_left_brain.cfm

Some of these traits could over-rule the gender issue when making such types of decisions.

It seems to be that way, in my experience and field. Women are more prone to language and feelings, which make them much more astute than men. Men are more prone to mathmatics because they are less in touch with themselves, and math is more of an escape from that "feeling thing" they fear so much.
