I want to buy all new bakeware at a moderate price, but I want to get really good stuff that will last a long time and that is pretty easy to clean. I don't bake a lot, so I don't need every piece in the world - just the basic stuff.

What brand should I look for? Features?

Also, has anyone tried the flexible bakeware (I think by kitchenaid - it's red)? Do you like it?

Consumer Reports reviewed flexible bakeware (3 brands, including Kitchenaid) in the January '06 issue. Verdict: don't bother.

There's a purchasing guide for bakeware at http://www.epinions.com/content_4238647428 that seems pretty detailed and helpful.

One thing I've found is that parchment paper on ordinary cookie sheets works well and makes cleanup very easy. You can use a sheet more than once, so it isn't too expensive. You can get it by the roll in places like Bed Bath and Beyond.

Don't bother with the silicon bakeware (the red stuff you're talking about). It seems neat at first, but it hard to deal with because it's so wobbly. It's not doing well at all. After just a couple of months being really expensive at Macy's, etc. it was marked to clearance and now you can buy it everywhere.

The best thing to do is go to Ross or TJ Maxx and get a complete set of a good brand there. I have some Mirro brand skillets from Ross (about $5 each) and they've lasted for years. Amazing stuff.

look for non stick. i don't remember the brand but i think its ecko who makes airbake, it works really well because the surface you cook on is spaced about an eight inch from the outside of the pan so you don't direct heat the baking items and they cook more evenly and stick less. i tried the flex stuff too, the cupcake and bread loaf pans are excellent, im not crazy about the cookie sheet but, they do store easily.

It is made of silicon and the chefs on the Food Network seem to like it. I would suggest a cookie sheet, a muffin tin, 2 9" round cake pans and one 13x9 square cake pan. And if you like brownies, you have to have a brownie pan. They also make mitts, and pot holders out of the silicon.
