Some of it burns away, some of it will be as ash in the bottom of your oven and then some of it is still there. There is no self cleaning oven that will clean itself completely. You still have to clean some. But I have owned both and would say a self cleaning is the best way to go.

When you use this feature it cleans the oven using a very high temp. The dirt as you call it is a fine ash. You are suppose to wipe it out with a rag or sponge when the oven cools.

Well, for one thing, there is no "dirt" in an oven. Unless you're a mud pie chef. The burnt debris in a self clean oven is normally disolved into a fine micro-powder. You wipe the stuff away.
