Purchase new cast iron fryers and would like to know how to cure them in a gas oven.

First, put it in a sink full of hot soapy water and use steel wool to scrub off the protective coating.
Dry thoroughly.
Coat the inside of the pan with a thick coat of a good quality oil. I use olive oil.
Put the pan in the oven at about 400F and bake for about an hour.
Let cool.
After that, if you use enough oil to cook in the pan, you should be able to just wipe it out.
If you wash it in soapy water, you need to cure it again.

Put in enough veg. oil into the pan to coat the inside. Most of the new ones today already come coated. The old ones can also be heated in an oven on 350 for an hour. then wipe out with paper towel.

wash w/ soap and water dry in the oven.. then remove. the coat liberleyw/ veg oil. pot back into the oven @450 until all is absorbed. repeat several times until you get a shiny glaze the bring the oven up to 500 degrees and leave it there for 2 hrs the shut off the oven and let cool slowly

After it is seasoned, just wipe it out w/a paper towel. If you ever need to wash it, wipe it w/an oiled paper towel & put it on a hot stove until the pan is hot..
