Ever since you've know what sex is and the whole process, you've been a completely different person? Like another side of you comes out of NOWHERE or something?

No. But ever since puberty, yes. Its biology not psychology. I can imagine that the facts of life are more profound for females. They bare (pun) most of the costs even though the laws and courts are trying to redistribute them more equitably. So, I can suppose that more girls are more deeply affected by the knowledge than guys. Don't go out at night alone, don't smile at strangers, don't... These are all psychological burdens. But I still think that for most, its the hormones (which changes us from asexual beings to sexual ones) which change us the most.
