I know that carboxylic acids and amine functional groups readily ionize by adjusting their pH, but there's a third one, can anyone help me out? Please? Thanks in advance!

Perhaps you're thinking of phenols, which react readily with OH- ions.

Amide formation. For example, CH3NH2 + H+ ===> CH3NH3+

CH3CO2H + NaOH ===> CH3CO2-Na.

The third one: CH3CO2H + H2NCH3 ===> CH3CONHCH3
