Koi are a type of carp and are eaten through much of Asia. As the previous poster said, you wouldn't want to eat one that has been exposed to certain medications (such as a very common one, Malachite Green, which causes cancer) but as to eating Koi, yes, that's not a problem at all. No doubt you can find plenty of recipes for carp all over the net.

As they have said previously, yes, as long as they are not full of chemicals/medications, but then there is this thought. Koi are very expensive. You can buy a pound of typical eating fish at the store for maybe $5-10/lb depending on the fish. For a pound of koi, you'd probably pay around $60-100. Pretty expensive for eatin' fish....

Kois Taipei / Hong Kong

They originate from a domesticated carp species, the common carp. It was aquacultured as a food fish as at least as far back as the 5th century in China. As resent as the 1970's a prize Kois have been served to a highly regarded visitor visiting a private pond of a avid collector of highly prized kois. The visitor is asked to point out his favorite and is later served the fish as a meal. It is considered a great honor to be given such a meal and it is disrespectful to turn it down.

Kois can be eaten as food. But usually kois are kept as ornamental fish and some varieties are very expensive. If you want to eat them, it is best to steam them and put a little oyster sauce and some herbs. If you can eat your own pets, I say, it takes a lot of guts to do that. Most pet lovers don't usually do that.
