It sounds like the piece of thread you were using was too long. If you sew with a long thread it usually does twist and knot. Just a length from your hand to elbow should be fine.

You can run the thread through a candle or other kind of wax to coat the thread - this keeps the thread tight as you sew, preventing knots. There are several brands of specialy waxes you can purchase. Check your local quilt shop. You could also switch to pre-coated hand quilting thread.
Another trick: use lengths no longer than 18" long.
And finally, the cheaper the thread, the more prone it is to knot up on you.

keep your finger and thumb pinched around the needle as you pull it through the thread will follow running through them.A tip for knots is not to pull, you know the loop the knot has attached usually,place the needle part way through then holding the thread just one end pull the needle upwards until the thread seems tied around the stem of the needle.Slip the needle out and hold one side of thread and pull the other the 'knot' will now undo.youll find this works 9 times out of 10

Pass the thread through product called 'Thread Heaven', costs about £3 to buy from any good stitching shop.
Failing that try running the thread through a bar of soap - my Mom used to do that, and it worked for her.
