You can hold it right after it is done if you wish. However some snakes(depending on the personality) are a little irritable right after. There fresh skin can sometimes be a little tender (kind of like right after a sunburn peels) so be gental for the first day. Once you get to know your snake you will be able to tell if it doesn't want to be messed with.

Snakes are blind during the shedding process, after the skin is completed shed there is nothing wrong with handling a corn snake or any other snake. The skin beneath the old skin is fully functional and just a strong and safe as previous skin. Always be gentle handling and snake and treat them with the respect they deserve.

You can actually hold a snake during shedding, to help it (the shedding) along.
You just hold your fingers close together and tight, but not too tight , just stiff enough so the snake can slither through and tight enough to help ease the old skin off of the snake.
The new skin underneath is just as good as will be the next day but the snake will be in a delicate state as shedding takes alot of nutrients and energy out of the snake so be gentle !

As long as the skin is all the way off, you can handle him right away. Although some snakes are a little irritable right after they shed.

I have owned lots of snakes and I would wait until his eyes are clear, and then you should be fine.

Why wait -- shedding in nature doesn't affect his behavior. Just make sure your hands are clean because he will have less barrier to protect him.
