Trees slow down raindrops as they fall through the canopy. This gives the slow moving rain a better chance for absorption by the tree roots. Also trees tend to drop leaves or needles which keep the rain around the trees longer giving it more chance to be absorbed by the rootball of the tree.
When you remove trees, more water runs off and it runs off at a faster speed, causing erosion and putting mud or silt in nearby streams.
