Human saliva contains an enzyme called amylase. This enzyme helps to turn starch into a sugar called maltose.

its amylase. it acts on carbo's and breaks them down into simpler forms .thats the reason why when u chew rice(carbohydrate) for a longer time u can taste the sweetness.

Its amalyse(also called ptyalin) it converts starch into maltose. this explains why if boiled rice is chewed very well it begins to taste sweet.
