you know beside ptyalin there is also one more enzyme that is amylaze

its amylase. it acts on carbo's and breaks them down into simpler forms .thats the reason why when u chew rice(carbohydrate) for a longer time u can taste the sweetness.

Its amalyse(also called ptyalin) it converts starch into maltose. this explains why if boiled rice is chewed very well it begins to taste sweet.
