As true as the stars (are) above. Look up, there they are. It's the truth, like the sky is blue or the sun will rise, etc.

It means that the stars above are there and will be there tomorrow (unless they all burned out at the same time, which, frankly, ain't likely to happen) so the fact that they exist is an absolute truth.

Therefore whatever is being compared to them is being stated as also being an absolute truth.
