Survival of the fitest. Only those that are most suited for an environment survive, everyone else dies.
Dawin finches are a great example. The finches are on an island. There are two kinds of finches, one has large beaks the others long skinny. There are none with medium beaks. The two birds can and sometimes will breed together, but all of the birds that are born with medium beaks die. The finches with big beaks, break seeds with hard shells, teh finches with long skinny beaks can reach into the plants to get small soft berries. The birds with the medium beaks are not strong enough to break the hard seeds, and not skinny enough to reach the small berries. The die because they have no food to eat.

Genetic accidents sometimes result in mutations which are advantageous in a particular environment.
Animals who possess this mutation tend to live longer and procreate more, sometimes resulting in the mutation becoming a dominant feature of the species.
