Salivary digestion occurs in the mouth. When food passes through the esophagus, gastric digestion commences., Enzymes are very pH specific in their operation. Enzymes in the mouth are designed to operate at pH 7 whereas the pH in the stomach being 1-2 from the acid require a different set of enzymes to function. The short answer to your question is zero.

I don't know for sure, but the amylase in the mouth cannot get past the stomach because the acids are too strong. The amylase works down the throat and stops at the stomach, and there is some more amylase further on in the digestive track. Sorry it's not so exact, but hope it helps!
