Who profits off of the music that gets released from musicians that have died? Or, more relevantly, where DOES the money go from their album sales? (Please tell me it's not ONLY the record companies)

Just like any other asset, it goes to whoever the musician left their assets to- minus all of the death taxes. So, sometimes it is the spouse of the artist or their children.
