I'd go with Matsui and Figgins without question - but here is my order incase you want to agree with one of the 2.
1. Matsui
2. Figgins
3. Zumaya
4. Billingsley
5. Guillen
The reason is that Billingsley has had a lot of trouble with pitch control in the past and i think still needs at least one more year before becoming reliable.
Guillen is definately replaceable, as there are around 15 shortstops either better or within his range. Also if your league deducts points for errors or grounding into double plays, guillen is known for doing those.
Zumaya as a reliever is not as valuable as Matsui or Figgins, but COULD push a keeper spot if he is named the closer (which currently is not the case).

Figgins b/c he is an all around guy, who fills the stat sheets night in and night out. Matsui b/c he is a guaranteed 30 HR 100+ RBI each year with that potent Yankees lineup.

I would choose Figgins, for his average, stolen bases, and runs in that offense, and Zumaya, because he'll be closing after this year, and his ERA is low. If holds count in your league even better.
If offense is more important, Matsui, because of his average as well.
