Shall I source the data based on dependant variables or it does not matter?
If time is one of the independant varible, how shall I sort them again?

You don't need to sort the data unless you want to graph or chart it with your trend curve. The regression is independent of data entry sequence.

If we are talking pairs of values, sorting is not necessary. If one of the variables it time, sorting is still not necessary but you must remember to include it as one of the two variables in the pair.
