Because bees can fly????

Well, actually, it's also because it's their natural defensive mechanism to protect them from other predators, to keep their colonies in inaccessible locations where only flying creatures can come against which they can defend themselves!

Not all bees live in high places...some live underground and some in bee boxes that are only a few feet off the ground. Bees will tend to find a cavernous dry place in which to build their hive that seems safe from possible predators or any other misfortunes that would cause the hive to suffer.
