The 2nd verse of Away in a Manger goes "The cattle are lowing, the poor baby wakes, but little Lord Jesus no crying He makes. I love thee Lord Jesus lookin down from the sky and stay by my cradle till morning is nigh."

A cow's "lowing" is the old fashion way of describing its mooing. (sounds alittle more "poetic" too- don't you think?).
