It means a lot of noisy sounds all at once and usually very loud. The sound of a band tuning up before playing could be described as a cacophony of sound.

Imagine being at the zoo...When we entered the monkey/parrot section, the cacophony was so deafening that our ears rang for half an hour afterwards.
