I don't want to buy another phone. Will they just transfer the new service to my same phone along with having the same phone number?

you can pick any provider you want and transfer your current number. it is a law that made this possible.

You can port your number, but if you can keep the phone depends on the techonology, currently the only phones that can be carried over to another provider are the GSM phones [Cingular (the new AT&T), and T-Mobile]. Sprint and Verizon need to have one of their own phones.

it depends on what service you have.if you have cingular you can switch to t-mobile and vice-versa. It depends on whether the phone uses SIM cards or not.
