The ones who live in the bush. They at least know how to look after their environment in a sustainable way. Something the 'developed' races simply can't do.

For oldest and therefore most evolved is it not the Aborigines of Australia? They are human like survivors from an age that no western culture can dream off. They evolved with the Duck Bill Platypus which is a link species between mammal and bird. They are also possibly the most friendly and cultured of races on our earth.

In practice the most evolved "race" is the one that has been around for the longest. Or the one that has 'evolved' the most; because nothing stops evolving... right?
So on that premise, I think lizards or tortoises have been around for several million years. Possible some extreme deep sea creatures have been around a while too.
Check this link, these dudes have "been around", or "evolved" for 10s of millions of years. Remind you of a dinosaur?

I can recommend a great book which would answer this question:
guns, germs and steel (a short history of everyone for the last 13,000 years)
ISBN:0-099-30278-0
Author: Jared Diamond
"This book answers the most obvious, the most important, yet the most difficult questions about human history: why history unfolded so differently on different continents. Geography and biogeography, not race, moulded the contrasting fates of Europeans, Asians, Native Americans, sub-Saharan Africans, and Aboriginal Australians"
A fantastic read.

Applying modern physics, and the notion that the speed of light is constant in space-time, it would seem that somewhere in Africa, the birthplace of the species, would lie the most evolved race of mankind. Furthermore, African languages do seem to have the most evolved grammars, as they have the most well-organized representations of space and time..

Pigeons. They don't eat meat, they won't even kill insects. They are immune to westnile and 99.9% immune to bird flu. They mate for life (no divorce). You can drop them anywhere on the same side of the planet they were born on and can find their way home. When threatened by a predator, they instinctively work together to escape, when impossible to escape the male will sacrifice himself to save his mate. Within 4 months of birth, a baby pigeon is self sufficient.
Humans, the dominant species - eat meat because we like the taste, kill because its convenient, are susceptible to westnile and afraid of bird flu. Many humans get lost in the mall or on the way to the mall; when threatened we often turn on each other, and typicaly end up supporting our children for 20 years or more.
We may be the smartest, most technologically advanced and clearly the dominate species indigenous to earth, but we are certainly not the most evolved.

In the past 70 years the most prolifically evolved race must be f1
As there are much fewer accidents as in the past!
As well as technological advances that have been adapted into normal road going cars giving much safer control to us all!
