If you are talking about your 1st cousin, then his/her children would be your 2nd cousins, if he/she is your 2nd cousin, then his/her children would be your 3rd cousins. If you are just meeting them for the first time, or it's been a long since seeing them, tell them that you are their cousin and then call them by their name.

If it is your 1st cousin, as in your mother or father's niece or nephew, then your cousin's children would be your 2nd cousins. When they have children, they will be your 3rd, and so on.
