Due to its mass, the heart would freeze much later than your blood or any other liquids in your body. As such, you would be dead much sooner than your heart actually freezing.

After death, your body organs generally lose 1.5 degrees of heat per hour (this is why they check your liver temperature to determine the time of death).

As for what would prevent your heart from freezing, I would say that continuing to live is a good start.

I think that by the time your heart is down to its freezing point you will already have been so far below your normal temperature range that you will have died from hypothermia anyway.

I don't think there is any type of music that would help it in that situation, so posting this under music seems strange.
