Ok I should add that I already have most of the films by Luc Besson, David Fincher and Stanley Kubrick & episodes 4,5,6 of star wars.

Most of my films are 2 disc S.E's.

There are a few I would recommend based on two things.
1) Quality of Film
2) Quality of Extras

The Royal Tenenbaum's 2-Disc
One of the best filmmakers out there is Wes Anderson. Not only does this film craft a terrific story and a deep character portrait, but the acting of the ensemble is fabulous and walking through the special features defininitely lets you see how much talent is at work on this film. Watch every minute of the extras along with commentaries, and you will fell like a much smarter film buff after.

Fight Club 2-Disc
First off, a very well made film with great performances by Pitt and Norton, but the behind the scenes extras and commentaries make it a lot of fun to watch again.

Lord of the Rings Extended Editions
Nothing needs to be said about the quality of films, but the hours and hours of extras add a deep understanding of the epic that was the filmmaking. The one thing to get these DVD's for is the commentaries with all the Hobbits. All four sit and laugh through stories and outtakes, while drinking and having fun - it adds a lot to the viewing.

Tombstone Special Edition
Before you laugh, trust me it is worth it. The special edition includes making of's that bring fun into the film and let you appreciate how much fun the actors had on set. After watching all of the special features, watch the movie again and appreciate the fun and "hamminess" of the film.

There are many others on my shelf but these are three that jumped out right away.

Have fun

A good place to start to see what you should add to your collection is either the AFI top 100 list, or the list of Best Picture Oscar winners.

Good ones to have:

Citizen Kane
The Godfather (at least 1 and 2)
Goodfellas
Reservoir Dogs
Jackie Brown
Kill Bill 1 and 2
The Silence of the Lambs
Hannibal
The Blair Witch Project
Gone With The Wind
The French Connection
The Departed

I could go on and on....
