what is it about Jewish culture/upbringing that makes a lot of them good comedians?

Lotus is on the right track. Not all Jews are funny ( I know I'm not) but as part of the culture we are taught to laugh, even at ourselves. Through history there has been a lot of persecution and the best way to get though it is laughter. Ethnic humor is also very funny, so many might get their start making fun of Judaism or their families.

when they were being whipped by the Egyptians while they dragged the stones for the pyramids across the desert they learned that if they were funny and charming the beatings were less severe

I don't know. Maybe because they are the most persecuted race on earth...they've learned to laugh at it?
