Snow appears white because of its crystalline structure: snowflakes. They reflect the all of the light so appear white. When snow melts its structure is much different: water. This doesn't reflect light in the same way as the snow , only reflecting a small amount of blue light back into our eyes. Water is also translucent so it is even harder to see the colour it has. This is where the white goes.

snow holds light becuase it is a solid substance. but white is at the very end of the color spectrum which means that there is pigment but not a whole lot of it. when the snow melts the color is still there it's just that water is terrible at holding in light becuase it is a liquid with a weak molecular structure. thats why ice cubes turn white. water can hold light, just not in liquid or gas form.

white was just a reflection of light.. there's no "white substance" added to the water that makes up the snow

Its is frozen crystal that makes light bounce and refract in a snowflake. When ince melts, the crystal structure is gone, and light does not refract. The "white" of the light is not gone, is is just no longer refracted and you cannot see it.
