First go with macaroni. Then I would go with a cheese pizza. Next some fried chicken, with potatoes salad. Then some salsbury steak with a nice thick gravy. Next eat some fettuchine alfredo, with blacken chicken on top. Then some fried shrimp. Next whip up a batch of buttermilk pancakes, with blueberries. Then some tacos with a mild salsa. Next lets try some teriaki chicken with a nice pinapple sauce, with some yoki soba. Now how about a fat cheese burger. With lettuce and tomatoes, and onions, and cheese, with pickles, can't forget the pickles. Now lets eat some desert.

It depends on what you had for breakfast and lunch. If you had a relatively light lunch, steak, potatoes, etc would be fine. Keep it balanced, and your over all total caloric intake under 2000. For instance, have a bowl of cereal, a piece of fruit, and a couple pieces of bacon for breakfast- about 600 k/cals. Then for lunch have a nice sandwich or bowl of soup, or a lean cuisine- about 400 k/cals. If you add in a couple healthy snacks for another 250 k/cals or so, then dinner is left with about 600 k/cals. Try a stir fry or something with lots of yummy seasoned veggies, and a few pieces of lean meat, and a small amount of grain, like whole grain rice. This is healthy and filling.

Beef and Spinach Lasagna Roll-Ups
Prep Time: 35 min ; Start to Finish: 1 hr 15 min
Makes: 2 servings Nutrition Information
Dinner for two? There's no need to make a whole pan of lasagna!
1/4lb extra lean ground beef
3tablespoons chopped onion
1jar (14-oz.) tomato pasta sauce
1egg white
1/2cup ricotta cheese
2tablespoons grated Parmesan cheese
1teaspoon dried oregano leaves
3/4cup shredded mozzarella cheese (3 oz)
4(8x2 1/2-inch) frozen precooked lasagna noodles, thawed
1cup fresh baby spinach leaves, washed, stems removed
1 . Heat oven to 350°F. In 8-inch skillet, cook beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently; drain. Stir in 1/2 cup of the pasta sauce. Remove from heat.
2 . In bottom of ungreased 8-inch square (2-quart) glass baking dish, spread 3 tablespoons of the remaining pasta sauce. In medium bowl, beat egg white. Stir in ricotta cheese, Parmesan cheese, oregano and 1/2 cup of the mozzarella cheese.
3 . Spread 1/4 each of ricotta mixture, spinach leaves and beef mixture over each lasagna noodle. Starting with short side, gently and loosely roll each noodle; place seam side down over sauce in baking dish. Top roll-ups with remaining sauce. Cover with foil.
4 . Bake 30 to 40 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/4 cup mozzarella cheese. Bake an additional 2 to 4 minutes or until cheese is melted. Let stand 5 minutes before serving.
