b/c it's an easy tiered method for describing how when a user types in www.yahoo.com into thier address bar the process involved for displaying that data onto your screen..

ie..

user sits in chair
Layer 7, firefox/IE is started, and website is typed in.
layer 5 and 6, the data is converted into a presentable form to the Stack
layer 4, source and destination ports are decided upon,
layer 3, routing information is looked up
layer 2, how to find the next hop on the local network
layer 1, which is the signalling and such on the wire..
etc..
obviously that's a very dumbed down version, but when teaching people how to troubleshoot using the OSI model that's a great rough model etc.(but then network engineers really only care about layer 2,3,4..everything else is an application problem..

Well, it helps with explaining it and also with troubleshooting problems.
