Fresh juice will have naural yeast on it and will ferment, given time. Keeping it cold is the best method while not adding preservatives.It an be frozen. Heating it as in pasteurization is another method now used on some juices that possibly have E. coli in them. E.coli is a natural bacteria found in the ground. it is only the new strain that is a problem.

Ethanol will only form in a juice if it is allowed to ferment. If the juice is pure, and kept refigerated after opening, this just will not happen.
